Wine:
Christophe and Patrick Bonnefond's Cuvée "Colline de Couzou" Red 2008 is one of the appellation's safest bets. The fruit is juicy, it lies delicately over full, concentrated matter. The aging makes it even more delicious, the totally smooth tannins giving the impression of extreme softness.Vinification:
100% de-stemmed, the grapes are vinified in vat before being transferred to barrel (of which 40% new) to carry out the malolactic fermentation and 18 months' aging.Color:
Dense, dark ruby colour with purplish highlightsNose:
Intense on the nose with ripe, spicy fruitPalate:
Juicy and smooth on the palate, bursting with fruit. Full on entry, with volume and coated tannins. The whole is fleshy and fruity, with attractive peppery notes.
Temperature:
Serve between 16 and 18°C. Decant 30 mins before drinking.Food and wine pairing:
Game, side of beef, boarCellar aging:
Enjoy up to and including 2018Patrick and Christophe Bonnefond took over the family estate in 1990, with the aim of enlarging it and making it one of the references of the Côte-Rôtie. The estate's six hectares are worked soley by hand, without mechanization. With a long periods of cask aging, the Bonnefond brothers create a relatively modern style of powerful, concentrated côte-rôties, with excellent aging potential.
