The estate and the wine Located on the slopes of Lavaux in the canton of Vaux, Switzerland, Charles Rolaz crafts an inspired and compelling range of biodynamic wines under the Hammel Terres de Vins label. A pioneering figure in Swiss viticulture for over 30 years, he masterfully blends grape varieties and terroirs, drawing on Burgundian influences to create refined, contemporary terroir-driven wines.

Extending from the Rhône glacier to the shores of Lake Geneva, this region’s complex geology shapes fresh, distinctive wines. Increasingly sought after by wine lovers, Switzerland is now firmly on the map as a serious wine region, dedicated to preserving rare native varieties while embracing sustainable viticultural practices.
Wine A pure Chasselas, the 2023 White Lavaux Grand Cru Villette La Bolliattaz comes from a monopole vineyard planted at 500 metres altitude on clay-limestone soils. This steep, south-facing terraced vineyard overlooks the Alps, benefiting from optimal sun exposure. Aged on fine lees, this white wine reveals itself with delicate richness, opening with a beautifully ripe nose. The palate is just as generous, unfolding with a fine bitterness that enhances its length and persistence. With its ample, textured profile, this is a food-friendly wine, perfect with sole meunière, fish terrine, or roasted cod. Rated 92/100 by the Selection Committee.
